Clear straw in colour with flashes of green this wine displayes a vibrant lemon and green apple aroma. The palate is crisp citrus with apple and flint undertones. This outstanding wine will age for many years developing characteristic nuts and honey flavours. Made from early picked fruit this wine comes in at 10% alcohol. As with all Semillon it will develop the classic Honeydew mellon characters with age. Our 8 year old semillons are drinking beautifully now.

 
 

"Attractive burnished gold colour with the nose showing developed citrus, honey and some slightly funky characters suggesting its organic winemaking regime might have included using wild yeasts. The palate is light and full-flavoured backed by lovely refreshing acids running to a crisp, clean finish and a long honeyed aftertaste. Lovely drinking, full of character and excellent value. 10.5 %"

We are committed to a philosophy of regional excellence and minimum intervention. This means that we fully explore the unique flavours and character of grapes from the district, the concept described by the French as 'terroir' – and doing so by letting the grapes "speak for themselves." We specialise in small batch winemaking with a strong commitment to developing a range of organic, no added preservative wines (NAP). In our organically certified winery, chemical enhancements are avoided by making the wine in small discrete batches.
Most of the grapes for our premium wines are handpicked - sorted - approved organic - and inspected by local experts. Our commitment is your quality expectation.

Our own labeled wine is made almost entirely from Shiraz, Cabernet Sauvignon, Merlot, Chardonnay and Semillon grapes grown on our vineyard.

Other small parcels of grapes are purchased from carefully selected growers in the Canowindra district.
The winery is certified as organic by Australian Certified Organic, processor number 10153P, so that if the appropriate grapes are available we can produce organically certified wine. Wines under the Toms Waterhole label are not organically certified as the vineyard has yet to reach organic standards.


A decade or so ago the entire Australian grape industry was reorganised along what might be called "European" principles. All the areas where grapes were grown were identified and assigned to so-called "Regions." Within those regions there were further, narrower, boundaries for areas that were considered more or less of identical climate and soil types. These narrower areas were called "geographical indicators," abbreviated to G.I. Thus Toms Waterhole is in the Central Ranges Region and the Cowra G.I.

Actually, we think that the whole G.I. system has already been the victim of Gresham's Law and seriously debased by such decisions as the Coonawarra one. What is more, we know that grapes from our next door neighbour, Hamilton's Bluff, are completely diifferent from those from vineyards on the other side of Cowra so to suggest that they are all the same is ... well ... odd. Toms Waterhole prefers to use our town of Canowindra as our label location rather than the G.I. indicator. Our wines can speak for themselves.

View It is a 50 / 50 blend of  Semillon and Chardonnay, straw/gold in colour and has a clean citrus aroma complimented by peaches and melons from the Chardonnay and a lemon, lime taste.

The Waterhole Blend Cabernet Shiraz Merlot
View This is a softer style of red. A of blend of Shiraz from 2006 and 2007 and Cabernet and Merlot from 2007. At present it shows typical Shiraz plum pudding characters.

2010 Shiraz Rose
View A shining pink, perhaps just a fraction darker than 2009 but you'd only notice if you looked at them side by side. The aroma is intense, rose petals and strawberries and the wine starts sweet like 2009 and finishes citrus dry but unlike 2009 with a touch of green apple and, we think a slightly more intense and lingering after-taste.

2007 Shiraz
View Dark red with an intense aroma of white pepper, dark berries and milk chocolate. It has an intense fruit sweetness with soft gentle tannins.
